  • ½ cup (1 stick) unsalted butter, at room temperature
  • ½ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 ¼ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • pinch of salt
  • 8 tablespoons (1 stick) unsalted butter, cut into small pieces
  • ¼ cup granulated sugar
  • 3 tablespoons light brown sugar, packed
  • 3 tablespoons all-purpose


  • In a medium bowl, combine the light brown sugar, all-purpose flour, and cinnamon. Cut in the butter until the mixture resembles coarse crumbs. Set aside.
  • Preheat oven to 375 degrees F. Grease an 8-inch square baking pan with butter or cooking spray.
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
