Preheat your oven to 375°F.
peel and slice two ripe pears and place them on a baking sheet. Drizzle with a little bit of olive oil and sprinkle with salt and pepper. Roast for 20-25 minutes or until tender and lightly browned.
Wash and dry a few handfuls of mixed greens and place them in a large bowl.
Add the roasted pears to the salad.
Crumble a few ounces of blue cheese over the top of the salad.
Sprinkle a handful of chopped walnuts over the top.
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, and honey to make the vinaigrette.
Drizzle the vinaigrette over the salad and serve immediately.
