- In a large pot over medium heat, add the diced onions and minced garlic. Cook until translucent.

Cooking
- Add the fresh tortellini to the simmering broth and cook for 7 minutes.
- Just before serving, stir in the heavy cream and spinach until the spinach wilts.
Notes
For more flavor, use high-quality broth and consider simmering with a parmesan rind. Customize with other veggies like kale or zucchini. This soup reheats well, but add a splash of broth when reheating to prevent it from getting too thick.
