Base ingredients
  • 1 medium onion, diced Use any variety you prefer.
  • 2 cloves garlic, minced Fresh garlic is recommended.
  • 1 can diced tomatoes Use your preferred brand.
  • 4 cups chicken broth Low-sodium broth is recommended.
Main ingredients
  • 9 ounces fresh tortellini Fresh from the refrigerated section is best.
  • 1 cup heavy cream For a creamy finish.
  • 1 handful fresh spinach Optional, can substitute with other vegetables.
  • 1 tablespoon Italian seasoning Alternatively, use a mix of dried herbs.

Method
 

Preparation
  1. In a large pot over medium heat, add the diced onions and minced garlic. Cook until translucent.
  2. Add the diced tomatoes and Italian seasoning. Stir to combine.
  3. Pour in the chicken broth and bring to a simmer for about 10 minutes.
Cooking
  1. Add the fresh tortellini to the simmering broth and cook for 7 minutes.
  2. Just before serving, stir in the heavy cream and spinach until the spinach wilts.

Notes

For more flavor, use high-quality broth and consider simmering with a parmesan rind. Customize with other veggies like kale or zucchini. This soup reheats well, but add a splash of broth when reheating to prevent it from getting too thick.
