  • 1 cup Creamy peanut butter Preferably thick and with just peanuts and salt for paleo-friendly.
  • 1/2 cup Maple syrup or honey Use maple syrup for vegan cookies.
  • 1 teaspoon Baking soda Helps the cookies puff up a bit.
  • 1 large Egg or flax egg Use flax egg for a vegan option (1 tablespoon of ground flax seeds plus 3 tablespoons of water).

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the peanut butter and maple syrup (or honey) until well combined.
  • Add in the baking soda and egg (or flax egg) and stir until the mixture is smooth and well combined.
  • Line a baking sheet with parchment paper. Scoop small blobs of dough onto the sheet, about the size of golf balls, and flatten with a fork in a criss-cross pattern.
  • Bake for 9 to 11 minutes, checking them by minute 9. The bottoms should look a little golden and the tops may still be soft.
  • Let the cookies cool on the tray for best results; moving them too soon may cause them to fall apart.

Notes

These cookies are forgiving; don’t overmix to keep them soft and chewy. Baking time may vary by oven, so adjust as needed. Feel free to experiment with different nut butters or add-ins.
