Preheat oven to 375 degrees F. Grease a baking dish with cooking spray.
Peel and slice potatoes into thin slices. Set aside.
In a small saucepan, heat milk and butter over medium heat until melted and warm.
Pour milk mixture over potatoes in the baking dish, and stir to combine. Add salt and pepper, to taste.
Top with shredded cheese, and bake for 10-12 minutes, or until potatoes are tender. Serve hot and enjoy!
