Ingredients
  

For the burritos

  • 4 pieces Flour tortillas (burrito size, about 10 inches) Warm before using to prevent cracking.
  • 8 slices Bacon (regular or thick cut) Cook until crispy.
  • 4 pieces Eggs Scramble and cook until slightly soft.
  • 1 cup Shredded cheese (cheddar, Monterey Jack, pepper jack, or a mix) Use your favorite cheese blend.
  • 1 cup Potatoes (optional) Cooked, crispy bits add heartiness.
  • to taste Salt and pepper Season eggs as desired.
  • 1 tablespoon Butter or oil for cooking eggs For scrambling the eggs.
  • to taste Salsa, hot sauce, or sour cream For serving, optional.

Instructions
 

Preparation

  • Cook the bacon in the air fryer until crisp. Drain on paper towels and crumble into bite-sized pieces.
  • In a bowl, crack the eggs, add a pinch of salt and pepper, and whisk. Scramble eggs in a skillet on low to medium heat until slightly soft.
  • If using potatoes, prepare them by using leftover roasted potatoes, frozen hash browns, or quick diced potatoes.
  • Warm the tortillas in the microwave for 10 to 15 seconds between two damp paper towels to prevent cracking.

Assembly

  • Fill each tortilla with a layer of eggs, crumbled bacon, and cheese along with any other desired fillings.
  • Fold in the sides of the tortilla, then roll it tightly and place seam side down.

Cooking

  • Lightly spray or brush the burritos with oil and air fry at 375°F (190°C) for about 6 to 9 minutes, flipping halfway, until the outside is crisp and the cheese is melted.

Notes

Burritos can be customized based on your preferred fillings. Consider using different cheeses, vegetables, or protein substitutes. To freeze, roll burritos tightly, wrap individually, and store in a freezer bag. Reheat frozen burritos in the air fryer for 12 to 16 minutes at 350°F (175°C).
