Ingredients
  

Main Ingredients

  • 2 pieces very ripe bananas The spottier the bananas, the better for sweetness.
  • 1 large egg
  • 1/4 cup sugar Brown sugar can be used for a deeper flavor.
  • 1/4 cup melted butter or neutral oil
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon Optional but adds coziness.
  • 1 pinch salt

Optional Ingredients

  • 1/2 cup chopped walnuts or chocolate chips or blueberries Add for extra flavor and texture.

Preparation

  • Mash the bananas in a bowl until mostly smooth with a few small lumps.
  • Whisk in the egg, sugar, melted butter, and vanilla extract.
  • Sprinkle in the flour, baking powder, cinnamon, and salt. Stir gently until just combined.

Cooking

  • Pour the batter into a greased or lined pan that fits your air fryer.
  • Air fry at 320°F for about 25 to 35 minutes, checking for doneness after 25 minutes.
  • Use the toothpick test to check if it comes out with a few moist crumbs.

Notes

Let the banana bread cool for at least 15 minutes before slicing for cleaner slices. Store banana bread tightly wrapped at room temperature for up to 2 days or in the fridge for about 5 days. It can also be frozen for 2-3 months.
