  • 1 pound Pork belly About 1 to 1.5 pounds, skin on or off both work
  • 1 teaspoon Salt Generously season
  • 1 teaspoon Black pepper Generously season
  • 1 teaspoon Garlic powder Optional, but recommended
  • 1 teaspoon Paprika or smoked paprika For a warm kick
  • 1 teaspoon Brown sugar Optional, helps with caramelized edges
  • 1 spray Oil spray Optional, only if pork belly is very lean

Instructions
 

Preparation

  • Pat the pork belly dry with paper towels to ensure crispiness.
  • Slice the pork belly into bite-sized cubes, around 1 inch.
  • Season generously with salt, pepper, garlic powder, and paprika. Add a pinch of brown sugar if desired.

Cooking

  • Preheat your air fryer at 400°F for about 3 minutes.
  • Arrange the pork belly in a single layer in the air fryer basket. Cook in batches if necessary.
  • Air fry at 400°F for 15 to 20 minutes, shaking the basket every 5 minutes until golden and crispy.
  • Let rest for 2 to 3 minutes before serving to retain crispiness.

Notes

Both skin on and skin off work well. Skin on can get extra crispy, but may be chewier if not rendered enough. Best served fresh, but can be stored in an airtight container for up to 3 days.
