  • 4 slices Bread (sourdough or any preferred sandwich bread)
  • 4 ounces Cheese (cheddar, Monterey Jack, or pepper jack) Shredded cheese melts faster than slices
  • 3 to 4 slices Bacon (cooked until crisp or chewy) Use leftover bacon if available
  • 1/4 to 1/3 cup Guacamole (store bought or homemade) Use thick guacamole to avoid sogginess
  • 1 tablespoon Butter or mayonnaise For spreading on the outside of the bread

Optional ingredients

  • 1 slice Tomato Optional for added freshness
  • 1 slice Red onion Optional for added crunch
  • 1 tablespoon Jalapenos Optional for heat
  • 1 tablespoon Hot sauce Optional for extra flavor

Instructions
 

Preparation

  • Preheat your skillet on medium to medium-low heat.
  • Spread a thin layer of butter or mayonnaise on the outside of each slice of bread.
  • Assemble the sandwich: Place one slice of bread (buttered side out), add cheese, bacon, guacamole, more cheese, and top with another slice of bread (buttered side out).

Cooking

  • Place the sandwich in the pan and cook for 3 to 5 minutes per side, pressing gently with a spatula.
  • If the bread is browning too fast and the cheese isn't melting, cover the pan for a minute or two.
  • Let the sandwich sit for 1 to 2 minutes before slicing.

Notes

For best results, use thick guacamole to prevent sogginess. Enjoy with a bowl of tomato soup or pickles on the side.
