Ingredients
  

For the Bundles

  • 1 pound asparagus, medium thickness, tough ends trimmed Choose medium-thickness asparagus for best texture.
  • 8-10 slices bacon, regular cut Regular cut bacon is preferable for even cooking.

For Seasoning

  • 1 tablespoon olive oil Lightly coat the asparagus to prevent drying.
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon zest Optional, adds a nice citrus flavor.
  • to taste Salt and black pepper Keep salt light since bacon is salty.
  • Lemon wedges for serving Use for a fresh squeeze before serving.

Preparation and Roasting

  • Preheat your oven to 400°F and place a large sheet pan inside to heat up.
  • Pat the asparagus dry and toss with olive oil, garlic powder, salt, pepper, and lemon zest if using.
  • Bundle 3 to 4 asparagus spears together and wrap one slice of bacon around each bundle, overlapping slightly.
  • Carefully remove the hot sheet pan and place the bundles seam side down, leaving space for air circulation.
  • Roast for 12 to 15 minutes, then turn the bundles and roast for an additional 5 to 8 minutes until the bacon is browned and the asparagus is tender.
  • For extra crispiness, switch the oven to broil for 1 to 2 minutes, watching closely.
  • Let the bundles rest for 2 minutes and serve with a squeeze of fresh lemon juice.

Notes

Tips: Choose medium-thickness asparagus for best texture. You can partially cook bacon for extra crispiness. Make ahead by wrapping and refrigerating bundles up to 12 hours.
