Ingredients
  

Dough Ingredients

  • 3 cups All-purpose flour
  • 1 cup Warm water To wake up the yeast
  • 2 teaspoons Instant yeast Active dry yeast can also be used
  • 1 teaspoon Sugar Just a little to help the yeast get going
  • 1 teaspoon Salt For flavor in the dough
  • 2 tablespoons Olive oil For softness and a nicer crust

Cheese Filling Ingredients

  • 1 cup Feta cheese Classic for flavor
  • 1 cup Mozzarella cheese For melt
  • 1/2 cup Kasar cheese Mild melty cheese, optional
  • 2 tablespoons Fresh parsley Optional, adds freshness
  • 1 egg Egg Optional for brushing the crust or cracking on top

Instructions
 

Prepare the Dough

  • Wake up the yeast by mixing warm water, yeast, and sugar in a bowl. Let sit for 5 to 10 minutes until foamy.
  • Add flour, salt, and olive oil. Stir until shaggy, then knead for 6 to 8 minutes until smooth and elastic.
  • Cover the dough and let it rise in a warm spot until doubled, about 45 to 60 minutes.

Prepare the Filling

  • Crumble feta and mix with mozzarella and parsley. Adjust seasoning to taste.

Shape and Bake

  • Divide dough into 2 to 4 pieces, roll each into an oval, fill with cheese mixture, and fold up the sides to create a boat shape.
  • Preheat oven to 450°F (230°C). Bake until crust is golden and cheese bubbles, about 12 to 15 minutes.
  • Optional: Crack an egg into the center during the last 2 to 3 minutes of baking.

Serve

  • Let sit for a couple of minutes, then slice and serve. Best enjoyed with a simple salad.

Notes

Use a hot oven and avoid overloading with filling for the best crust texture. Let the pide rest for a couple of minutes before slicing.
