Ingredients
  

Main Ingredients
  • 2 pounds Boneless, skinless chicken breasts or thighs Use whichever you have on hand
  • 1 cup BBQ sauce Your favorite kind
  • 0.5 cup Chicken broth Just enough to help the Instant Pot
  • 1 medium Onion Optional, adds flavor
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste
  • 1 teaspoon Garlic powder
  • 1 tablespoon Olive oil Optional

Method
 

Preparation
  1. Add a tiny splash of oil to the bottom of the Instant Pot (if using).
  2. Add the chopped onion and sauté for a couple of minutes until fragrant.
  3. Layer in the chicken and season with salt, pepper, and garlic powder.
  4. Pour chicken broth over the chicken and add half of the BBQ sauce.
Cooking
  1. Seal the lid on the Instant Pot and set the valve to seal.
  2. Pressure cook on high for 12 minutes.
  3. After cooking, let the pressure release naturally for a few minutes, then carefully vent the pressure.
  4. Open the lid and shred the chicken directly in the pot.
  5. Stir in the remaining BBQ sauce and let it bubble on 'keep warm' for a few minutes.

Notes

For maximum flavor, make sure to include some liquid at the bottom. Taste and add more BBQ sauce if desired. This recipe is versatile, allowing for variations such as adding chipotle or apple cider vinegar for extra flavor.
