- Chop the beef into bite-sized pieces and sear them in a hot pan over high heat until browned. Remove from the pan and let them rest.
- In the same pan, add butter and mushrooms. Sauté until golden brown.
- Add onions and garlic to the pan and cook until the onions are soft.
- Pour in the beef broth and let it simmer to combine the flavors.
- Return the beef to the pan and turn off the heat before stirring in the sour cream, mustard, and smoked paprika.
- If the sauce is too thick, add a splash of broth; if too thin, let it simmer for a few more minutes. Season with salt before serving.
