  • 1 pound Beef (top sirloin, flank, or your choice) Cut into bite-sized pieces
  • 8 ounces Mushrooms (button or cremini) Sliced
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 2 cups Beef broth Ensure it's low-carb
  • 1 cup Sour cream Full fat, nothing fancy
  • 1 tablespoon Dijon mustard For flavor
  • 1 teaspoon Smoked paprika For flavor
  • 2 tablespoons Butter For cooking
  • 1 tablespoon Olive oil Optional

  1. Chop the beef into bite-sized pieces and sear them in a hot pan over high heat until browned. Remove from the pan and let them rest.
  2. In the same pan, add butter and mushrooms. Sauté until golden brown.
  3. Add onions and garlic to the pan and cook until the onions are soft.
  4. Pour in the beef broth and let it simmer to combine the flavors.
  5. Return the beef to the pan and turn off the heat before stirring in the sour cream, mustard, and smoked paprika.
  6. If the sauce is too thick, add a splash of broth; if too thin, let it simmer for a few more minutes. Season with salt before serving.
