  • 1/2 tsp Black pepper Adjust to taste.

  • 1/2 tsp Paprika
  • 1 tsp Brown sugar Optional, for sweetness.
  • 1/4 tsp Red pepper flakes Optional, for heat.

Method
 

Preparation
  1. In a large bowl, combine the ground pork with salt, black pepper, sage, paprika, and any additional spices you wish to add.
  2. Mix the ingredients together until evenly combined, being careful not to overmix.
  3. Shape the mixture into patties, about the size of a golf ball, and flatten them slightly.
Cooking
  1. Heat a skillet over medium heat (cast iron works best).
  2. Cook the patties for about 3 to 4 minutes on each side, or until golden brown and cooked through.

Notes

Store leftover patties in an airtight container in the fridge for up to 4 days or freeze them for longer storage. Reheat in a skillet or microwave.
