  • 4 pieces Pork chops, about 1 inch thick (bone-in or boneless) Choose based on preference.
  • 1/2 cup Brown sugar Provides sweetness and depth.
  • 3 cloves Garlic, minced Fresh garlic preferred, garlic powder can be used.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Black pepper To taste.
  • 1 teaspoon Smoked paprika (or regular paprika) Adds depth of flavor.
  • 2 tablespoons Butter For searing and flavor.
  • 2 tablespoons Olive oil For cooking.
  • 1/2 cup Chicken broth (or water if necessary) For the sauce.
  • 1 tablespoon Apple cider vinegar (or balsamic vinegar) To balance sweetness.

Instructions
 

Preparation

  • Pat the pork chops dry with paper towels.
  • Season both sides with salt, pepper, paprika, and a little garlic.

Cooking

  • Heat a skillet over medium-high heat, add olive oil and a little butter.
  • Sear the pork chops for about 3-4 minutes per side until browned.
  • Lower the heat to medium, add more butter, and sprinkle in the brown sugar.
  • Add chicken broth and a splash of apple cider vinegar, stirring to combine.
  • Put the pork chops back in the pan and spoon the sauce over them. Let it simmer gently until the sauce thickens and the chops are cooked through.
  • Let the pork rest for a couple of minutes before serving.

Notes

For best results, do not crowd the pan while searing. Use a thermometer to check internal temperature, ideally around 145°F.
