Ingredients
  

For the Cauliflower Mash
  • 1 head Cauliflower Chopped and steamed
  • 4 oz Cream cheese For creaminess
  • 2 tbsp Butter To taste or extra if desired
  • 1 tsp Salt Adjust to taste
  • 1 pinch Garlic powder Optional for flavor
  • 0.5 cup Grated parmesan Optional for added flavor
For the Keto Gravy
  • 1 cup Beef or chicken broth For a flavorful base
  • 2 tbsp Butter Melted for making gravy
  • 0.5 tsp Xanthan gum To thicken the gravy, optional
  • 1 pinch Black pepper To taste
  • 1 pinch Sage Optional for added flavor

Method
 

Preparation of Cauliflower Mash
  1. Chop the cauliflower and steam until soft, or microwave if in a hurry.
  2. Drain the cauliflower well to remove excess water.
  3. Blend the steamed cauliflower with cream cheese, butter, salt, and garlic powder until smooth.
  4. Adjust seasoning with more salt or butter if needed.
Preparation of Keto Gravy
  1. In a pan, melt butter over medium heat.
  2. Add a splash of broth and whisk while slowly sprinkling the xanthan gum.
  3. Let the gravy simmer until thickened, adjusting thickness by cooking longer if necessary.
  4. Season with black pepper and sage if desired.
Serving Suggestions
  1. Serve the cauliflower mash with keto gravy over the top.
  2. Add sautéed mushrooms or serve with grilled chicken/pork chops.
  3. Consider it a side dish for brunch or lunch with egg on top.

Notes

Can be stored in the fridge for 3-4 days. Freeze if needed but reheat gently. Add fresh herbs for a flavorful boost.
