Base Ingredients

  • 6 cups Rice cereal Regular crisp rice cereal works best.
  • 10 oz Mini marshmallows They melt faster and smoother.
  • 3 tbsp Butter Salted butter preferred.
  • 1 tsp Cherry extract For added cherry flavor.
  • 1/2 cup Chopped maraschino cherries Pat them dry well before using.

Chocolate Coating

  • 12 oz Chocolate for coating Melting wafers or chocolate chips with a bit of coconut oil.

Preparation

  • In a large saucepan over low heat, melt the butter and marshmallows together, stirring frequently.
  • Once melted and smooth, remove from heat and stir in the cherry extract and chopped maraschino cherries.
  • Add in the rice cereal and stir until just coated.
  • Press the mixture into a greased baking dish with lightly greased hands or parchment paper.
  • Allow the treats to cool for 15-20 minutes.

Coating

  • Melt the chocolate in a microwave-safe bowl in short bursts, stirring until smooth.
  • Spread the melted chocolate over the cooled cereal treats evenly.
  • Let the chocolate set before cutting into squares.

Notes

Use low heat when melting marshmallows to avoid hard texture. Allow cooling before adding chocolate.
