Preparation
- Melt the coconut oil in a mixing bowl.
- Add peanut butter, cocoa powder, and erythritol. Stir until smooth.
- Let the mixture set for a few minutes to cool slightly.
- Scoop and roll the mixture into small balls or press into a mini muffin pan.
- Place in the freezer until set, approximately 30 minutes.
- Serve directly from the freezer.
Notes
If sweeter treats are preferred, add more sweetener. For added crunch, consider stirring in chopped nuts. Keeps well in the freezer for at least two weeks.
