Ingredients
  

Main Ingredients

  • 2 cups Fresh corn kernels (cut off the cob or frozen) If using frozen, make sure to thaw and drain well.
  • 1 cup All purpose flour
  • 1 tbsp Baking powder Helps the fritters puff up.
  • 2 large Eggs Provides structure.
  • 1 cup Milk Any type of milk.
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1/4 cup Chopped green onion Optional for added flavor.
  • 1/4 tsp Paprika Optional for added flavor.
  • 1/2 cup Shredded cheddar cheese Optional for cheesy variant.

For the Honey Butter

  • 1/2 cup Softened butter
  • 1/4 cup Honey
  • 1/4 tsp Salt Do not skip for enhanced flavor.

Instructions
 

Preparation

  • In a bowl, mix the flour, baking powder, salt, and pepper together.
  • In another bowl, whisk together the eggs and milk.
  • Combine the wet ingredients with the dry ingredients until just mixed.
  • Fold in the corn (and any optional ingredients).

Cooking

  • Heat a skillet over medium heat and add a thin layer of oil.
  • Spoon small mounds of the batter onto the skillet and flatten slightly.
  • Cook until the bottoms are golden and the edges are set, then flip to cook the other side.

Making Honey Butter

  • In a separate bowl, mix together softened butter, honey, and salt until well combined.

Serving

  • Serve the fritters warm with a generous topping of honey butter.

Notes

You can freeze the fritters for later use. Cool them completely before freezing them in a single layer. They keep best for up to 2 months.
