Ingredients
  

Base Ingredients

  • 1 cup Rolled oats Make sure they're certified gluten-free if needed.
  • 1/2 cup Nut butter (peanut, almond or cashew) Helps to bind the mixture.
  • 1/3 cup Cocoa powder Use a cocoa powder that you enjoy.
  • 1/4 cup Honey or maple syrup Sweetener choices.
  • 1 teaspoon Vanilla extract Adds extra flavor.
  • 1 pinch Salt Enhances the chocolate flavor.

Optional Add-ins

  • 1/2 cup Mini chocolate chips Add for more chocolatey goodness.
  • 1/4 cup Rainbow candy sprinkles For decoration and fun.

Instructions
 

Preparation

  • Add rolled oats and cocoa powder to a bowl and stir them together to avoid cocoa clumps.
  • Add nut butter, honey or maple syrup, vanilla, and salt. Stir until the mixture resembles thick brownie dough.
  • Fold in mini chocolate chips if using. Let the dough sit for 5 minutes if it feels too warm.
  • Scoop and roll into balls approximately 1 to 1.5 inches wide.
  • Roll each ball in sprinkles or press them onto each ball. If sprinkles aren’t sticking, wet your fingertips slightly and press again.
  • Chill the bites in the refrigerator for at least 20 to 30 minutes for firmness and enhanced flavor.

Notes

If the mixture is too dry, add 1 teaspoon more honey or nut butter; if too sticky, add a spoonful of oats. For variations, use sunflower seed butter to make them nut-free, or mix in protein powder for added nutrition.
