Main Ingredients

  • 3 cups cooked shredded chicken Rotisserie chicken works great.
  • 1 packet ranch seasoning Or 2 to 3 tablespoons from a big jar.
  • 8 ounces cream cheese Softened.
  • 1 cup sour cream or Greek yogurt Either works.
  • 2 cups shredded cheddar cheese Plus a little extra if desired.
  • 1.5 cups cooked crumbled bacon Cooked until crispy.
  • 1 bag frozen tater tots For the crispy topping.
  • to taste sliced green onions For topping, optional.
  • a pinch black pepper or garlic powder Optional seasoning.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Spray a 9x13 baking dish lightly.
  • In a big bowl, mix the shredded chicken, ranch seasoning, cream cheese, sour cream, half the cheddar, and most of the bacon. If the cream cheese is hard, microwave it for about 15 seconds.

Assembly

  • Scoop the creamy chicken mixture into the baking dish and spread it out evenly.
  • Sprinkle the rest of the cheddar over the top. Line up the tater tots across the whole surface.

Baking

  • Bake uncovered for 40 to 50 minutes, until the tater tots are crispy and the edges are bubbling. For extra crisp, broil for 1 to 2 minutes at the end, watching closely.
  • Let it sit for 5 to 10 minutes before serving.

Notes

This casserole can be made ahead of time and refrigerated for up to 24 hours before baking. You can also freeze it after baking, keeping it for up to 2 months.
