  • 2 cups frozen peas Can also use canned or fresh peas.
  • 2 tablespoons butter Use salted or unsalted, but adjust added salt accordingly.
  • 2 tablespoons all-purpose flour Use gluten-free flour if needed, add slowly.
  • 1 cup whole milk 2% works, skim will be thinner.
  • to taste salt Season according to preference.
  • to taste black pepper
  • a pinch sugar Optional, enhances sweetness of peas.

Preparation

  • If using frozen peas, simmer them in a little water until hot, then drain.

Cooking

  • Melt butter in a saucepan, stir in flour, and cook for about a minute.
  • Slowly add milk while stirring and let the sauce thicken.
  • Season with salt, pepper, and a tiny pinch of sugar.
  • Stir in the warm peas and cook for another minute or two until heated through.

Notes

If the sauce thickens too quickly, reduce heat and whisk vigorously to smooth it out. For variations, consider adding cheese, cream, herbs, or other spices to suit your taste.
