Salad Ingredients

  • 4 cups fresh broccoli florets, cut small Make sure florets are bite-sized for easier eating and dressing coating.
  • 6 slices cooked bacon, chopped Cook until crisp and let cool before chopping.
  • 1 small red onion, chopped Optional, but adds great flavor.
  • 1/2 cup sunflower seeds or chopped almonds For added crunch.
  • 1/2 cup dried cranberries or raisins Optional, adds sweetness.

Dressing Ingredients

  • 1 cup mayonnaise Can substitute part with Greek yogurt for a lighter version.
  • 1-2 tablespoons apple cider vinegar For tang; lemon juice can be used as a substitute.
  • 1-2 tablespoons honey or sugar Adjust sweetness to taste.
  • to taste salt and pepper Use a generous amount of pepper for a bit of a kick.

Instructions
 

Preparation

  • Cook the bacon until crisp, then let it cool and chop it.
  • Chop broccoli into small florets.
  • In a large bowl, combine the broccoli, bacon, onion, and crunchy add-ins.
  • In a separate bowl, whisk together the dressing ingredients.
  • Pour the dressing over the salad and mix well.
  • Cover and chill for at least 30 minutes before serving.

Notes

For meal prep, keep the bacon separate and mix it in right before serving to keep it crispy. Adjust the sweetness of the dressing to your taste preference.
