Ingredients
  

Mashed Cauliflower Base

  • 1 large head cauliflower Cut into florets
  • 1/2 cup cream or soft cheese For creaminess, adjust as needed

Vegetable Add-ins

  • 1 cup kale Chopped, can substitute with spinach or cabbage
  • 2 slices bacon Optional, can substitute with smoked tofu for vegan version

Seasonings

  • 1 teaspoon salt To taste
  • 1/2 teaspoon pepper To taste
  • 1 teaspoon nutmeg or smoked paprika Optional, for added flavor

Instructions
 

Preparation

  • Steam or boil the cauliflower until fork-tender. Drain well.
  • Let the cauliflower sit in a colander for 2-3 minutes to remove excess moisture.
  • Blend the cauliflower with cream or soft cheese, adding it gradually to achieve a creamy texture.
  • Add in the chopped kale and optional bacon. Stir until well combined.

Serving

  • Serve warm, topped with additional seasonings if desired.
  • Pair with grilled chicken, pork chop, or enjoy as a base for stew.

Notes

This mash can be customized with various add-ins like chives, nutritional yeast, or other vegetables. It can be prepared ahead of time and reheated easily. Freezing is also an option; just stir well before serving again.
