Main Ingredients

  • 3 cups Cooked shredded chicken Rotisserie or leftover chicken works well
  • 16 ounces Potato gnocchi Store-bought for convenience
  • 1 cup Half and half or heavy cream For creaminess
  • 2 cups Fresh spinach Added at the end
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste
  • 1 teaspoon Italian seasoning To enhance flavor

Preparation

  • Melt butter or olive oil in a large pot over medium heat.
  • Add chopped onion, carrots, and celery; cook until softened.
  • Stir in minced garlic and cook for about 30 seconds.

Cooking

  • Pour in chicken broth and bring to a gentle simmer.
  • Stir in shredded chicken; let it soak up the flavors for a few minutes.
  • Add potato gnocchi and cook until they float, usually a few minutes.
  • Reduce heat and stir in half and half or cream, followed by spinach until wilted.
  • Taste and adjust seasoning with salt, pepper, or Italian seasoning.

Notes

Make sure to use a good quality broth for better flavor. For slow cooking, add broth, vegetables, and chicken first, then gnocchi and cream later to prevent mushiness.
