Ingredients
  

Main Ingredients

  • 1 pound smoked sausage (such as andouille) Feel free to use any smoked sausage on sale.
  • 1 pound chicken thighs Thighs are preferred as they don't dry out.
  • 1 cup bell peppers, chopped Use a mix of colors for the best flavor.
  • 1 cup celery, chopped
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 14.5 ounces diced tomatoes, canned
  • 1 cup chicken broth
  • 1 tablespoon Creole seasoning Use store-bought or homemade.
  • 1 leaf bay leaf Optional, for added flavor.
  • to taste salt and pepper

For Serving

  • 3 cups white rice To serve with the dish.
  • to taste parsley, chopped For garnish, optional.

Instructions
 

Preparation

  • Chop the smoked sausage into bite-sized pieces.
  • Optionally, sear the sausage in a skillet for extra flavor.
  • Cut the chicken into large chunks.
  • Prepare the holy trinity: chop the bell peppers, celery, and onions.
  • Add the garlic, diced tomatoes, Creole seasoning, and chicken broth to the slow cooker.
  • Add the chopped sausage and chicken to the slow cooker.
  • Toss in a bay leaf if desired.
  • Season with salt and pepper to taste.

Cooking

  • Cover and set the slow cooker to low for 6 hours or high for 3 hours.
  • Stir the contents occasionally, and taste before serving.
  • Shred the chicken into smaller pieces if preferred before serving.

Serving

  • Serve hot over white rice, sprinkle with chopped parsley if desired.

Notes

Leftovers are great for lunch. Can be made ahead as a freezer meal. Cooked sausage and chicken can also be kept in the freezer for convenience.
