Ingredients
  

Main Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs Should reach 165°F when cooked.
  • 1 box boxed stuffing mix Choose your preferred flavor.
  • 2 cups chicken broth Used to moisten stuffing and in soup mixture.
  • 1 can creamy soup base Can use cream of chicken or mushroom.
  • 2 tablespoons butter Dot on top of the stuffing before cooking.

Instructions
 

Preparation

  • Season the chicken with salt and pepper.
  • In a bowl, whisk together the creamy soup and a splash of chicken broth. Add sour cream if desired.
  • Spoon the soup mixture over the seasoned chicken in the slow cooker.
  • In another bowl, moisten the stuffing mix with the remaining chicken broth until lightly damp.
  • Scatter the stuffing evenly over the chicken and soup mixture.
  • Dot the stuffing with pieces of butter.

Cooking

  • Cover and cook on low for 4 to 6 hours until the chicken is tender.

Notes

Store leftovers in airtight containers for up to 3-4 days in the fridge or freeze for up to 2 months. Reheat with a splash of broth to maintain moisture.
