  • 2 pounds russet potatoes Peeled and sliced about 1/4 inch thick
  • 1 each yellow onion Thinly sliced
  • 12-16 ounces smoked sausage or andouille Cut into coins
  • 1/2 cup chicken broth As a base for the sauce
  • 1 tablespoon butter or olive oil For coating

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt Add to taste

Garnish

  • 1 handful chopped green onions or parsley For freshness
  • 2-4 tablespoons sour cream Fold in for extra creaminess

Instructions
 

Preparation

  • Slice the potatoes and onions evenly, about 1/4 inch thick.
  • Cut the sausage into coins.
  • Layer sliced potatoes and onions in the slow cooker, then add the sausage on top.

Cooking

  • Toss everything with butter or olive oil, garlic powder, paprika, black pepper, and salt.
  • Pour in chicken broth to help steam and soften the potatoes.
  • Cook on low for 5 to 6 hours or on high for 3 to 3.5 hours until potatoes are tender.

Serving

  • Finish with chopped green onions or parsley and fold in sour cream if desired.
