Main Ingredients
  • 1 whole whole chicken (3-5 pounds) Fresh or thawed chicken
  • 2 tablespoons smoked paprika For seasoning
  • 1 tablespoon garlic powder For seasoning
  • 1 medium onion Chopped, placed in the slow cooker
  • 3 cloves garlic Crushed, placed in the slow cooker
  • 2 pieces potatoes Chunky pieces, optional, for placement in the slow cooker
Optional Enhancements
  • 1 slice lemon To place inside the chicken cavity for flavor
  • 2 tablespoons honey or maple syrup For brushing on the skin before broiling
  • 1 sprig fresh herbs (thyme, rosemary, sage) Optional, for additional flavor

Method
 

Preparation
  1. Rub the whole chicken with smoked paprika and garlic powder.
  2. Place chopped onion, crushed garlic, and potato chunks at the bottom of the slow cooker.
  3. Position the seasoned chicken on top of the vegetables.
Cooking
  1. Cover and cook on low for 6-7 hours or high for 4 hours. Do not peek.
Crisping the Skin
  1. Once cooked, carefully lift the chicken out using tongs and place it under the broiler for 4-5 minutes to crisp the skin.
  2. Optionally, brush melted butter on the skin before broiling for extra flavor.

Notes

For serving, shred the chicken for tacos, toss into salads, or serve with sides like mashed potatoes.
