  • 4 pieces large sweet potatoes Choose bright sweet potatoes for the best flavor.
  • 2 tablespoons olive oil Can substitute with coconut oil.
  • 1 teaspoon salt Use to taste.
Optional Seasonings and Toppings
  • 1 teaspoon smoked paprika For added flavor.
  • 1 teaspoon garlic powder For added flavor.
  • 1 tablespoon fresh lime or lemon juice Enhances flavor.
  • 2 tablespoons chopped fresh cilantro Optional topping.
  • to taste hot sauce Optional for additional kick.

Method
 

Preparation
  1. Wash the sweet potatoes thoroughly, scrubbing the skin since you'll be eating it.
  2. Dry the sweet potatoes, then poke each one several times with a fork to vent.
  3. Rub each potato with olive oil and sprinkle with salt.
  4. Place the potatoes directly on the oven rack (use foil beneath to catch drips) and bake at 400°F (204°C) for 45-55 minutes.
  5. Once done, slice down the middle of each potato, fluff the insides with a fork and serve with desired toppings.

Notes

For crispy skin, brush the potatoes with oil before baking. If short on time, slice the potatoes in half to reduce baking time, but watch for burning.
