Doritos Taco Hash Brown Casserole

A crunchy, cheesy, and slightly spicy casserole that combines the flavors of taco night with the fun crunch of Doritos. Perfect for busy nights and feeding a crowd.

Ingredients
  

Main Ingredients

  • 1 bag frozen hash browns Shredded or diced both work
  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning Or your favorite homemade blend
  • 1 can Rotel or diced tomatoes with green chiles Optional but recommended
  • 1 cup sour cream or plain Greek yogurt
  • 2 to 3 cups shredded cheese Cheddar, Mexican blend, or pepper jack
  • 1 small onion, diced Optional
  • to taste Salt and pepper
  • as needed Cooking spray or oil For greasing the dish
  • as needed Doritos Nacho Cheese is classic, but spicy works too

Instructions
 

Preparation

  • Preheat the oven to 375°F. Spray a 9 by 13 baking dish with cooking spray.
  • Brown the meat in a skillet. If using onion, cook it with the meat. Drain excess grease if needed.
  • Stir in the taco seasoning and a splash of water. Add Rotel if using and let it simmer for a minute.
  • In a large bowl, mix the frozen hash browns, sour cream, about half the cheese, and a little salt and pepper. Fold in the taco meat.
  • Spread the mixture into the baking dish and top with the remaining cheese.

Baking

  • Bake for about 35 to 45 minutes, until hot and bubbly with slightly golden edges.
  • In the last 5 to 10 minutes, crush Doritos and sprinkle them on top. Pop it back in the oven just long enough to warm and lightly toast the chips.

Notes

For storage, keep leftovers in a tight container for up to 4 days. Reheat in the oven or air fryer for better texture. If freezing, wrap well without Doritos, and bake later, adding fresh chips before serving.
