  • 1 cup peanut butter (creamy) Smooth texture preferred.
  • 1 cup unsalted butter If using salted butter, reduce additional salt.
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar Add gradually; it firms up once chilled.
  • Pinch of salt Optional, enhances peanut butter flavor.

Preparation

  • Line an 8 or 9 inch pan with parchment paper and lightly grease it, especially the corners.
  • In a pot over low heat, melt the butter and peanut butter together, stirring constantly to keep it smooth.
  • Remove from heat. Stir in the vanilla extract and optional salt.
  • Gradually add powdered sugar, stirring after each addition until the mixture is thick.
  • Press the mixture into the lined pan using the back of a spoon or a piece of parchment.
  • Chill in the refrigerator for at least 2 hours until firm.
  • Slice into squares for serving.

Notes

Pairs well with peanut butter popcorn and can be topped with chocolate or nuts for a decorative touch. Keep chilled for best texture.
