Ingredients
  

Main Ingredients

  • 1.5 cups long grain white rice, uncooked
  • 2 cups water or chicken broth
  • 1 can cream of mushroom soup or cream of chicken
  • 1 packet onion soup mix
  • 4 pieces boneless skinless chicken breasts or thighs

Optional Additions

  • black pepper to taste
  • sliced mushrooms optional topping
  • shredded cheese optional for added creaminess

Instructions
 

Preparation

  • Heat your oven to 350°F.
  • Grab a 9 by 13 baking dish. Pour in the uncooked rice.
  • In a bowl, stir together the cream soup and water or broth until it looks smooth. Pour that over the rice and gently spread it around so the rice is mostly covered.
  • Lay the chicken right on top. Sprinkle the onion soup mix all over the chicken and sauce.
  • Cover the dish tightly with foil to keep the steam in.

Cooking

  • Bake for about 1 hour and 15 minutes. If chicken breasts are very thick, it may need closer to 1 hour and 30 minutes.
  • Check that the chicken is cooked through and the rice is soft. Let it rest for 5 to 10 minutes, then fluff the rice with a fork and serve.

Notes

Do not open the foil while baking as it loses steam; seal the dish well to prevent the rice from being crunchy. If desired, add a squeeze of lemon and parsley after baking for extra brightness.
