Ingredients
  

Cookie Ingredients
  • 1 cup softened butter Use room-temperature butter for better mixing.
  • 1 cup granulated sugar Can substitute with coconut sugar for a different flavor.
  • 1 large egg Alternatively, a mixture of ground flax and water can be used as an egg substitute.
  • 2 teaspoons vanilla extract Use real vanilla for better flavor.
  • 2 cups gluten free flour blend Ensure it contains xanthan gum or add a half teaspoon.
  • 1 teaspoon baking powder
  • 1 pinch salt
Frosting Ingredients
  • 1 cup powdered sugar
  • 1 tablespoon butter Softened to blend easily.
  • 1 tablespoon milk Add more for desired consistency.
  • 1 teaspoon vanilla extract Optional food coloring for decoration.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, sift together the gluten free flour blend, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until the dough is workable. If the dough is sticky, sprinkle in a bit more flour.
Baking
  1. Roll out the dough between two sheets of parchment paper to about 1/4 inch thick.
  2. Cut out cookie shapes and place them on a baking sheet.
  3. Bake in the preheated oven for 8-9 minutes, until the bottoms are lightly golden.
  4. Allow the cookies to cool completely on a wire rack.
Frosting
  1. In a bowl, mix together the powdered sugar, softened butter, and milk until smooth.
  2. Add vanilla extract and mix again, adjusting milk for desired consistency.
  3. Frost the cooled cookies and add sprinkles if desired.

Notes

Store cookies in a container with parchment layers to prevent sticking. They freeze well; layer with parchment and freeze in an airtight container for freshness.
