Ingredients
  

For the Filling

  • 4 large eggs Help the filling set.
  • 1 cup Greek yogurt or milk For a creamy base.
  • 2-3 cups chopped ham Thick cut ham gives a better bite.
  • 2-3 cups shredded cheese Use a mix for flavor; mozzarella plus cheddar or kefalotyri.
  • to taste teaspoon black pepper Essential for flavor.
  • optional teaspoon dried oregano For extra flavor.

For the Phyllo

  • 8-10 sheets phyllo dough Thawed and kept covered to prevent drying.
  • to taste tablespoon butter or olive oil For brushing the phyllo.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Butter or oil a 9x13 baking dish and set the phyllo next to you, covering it with a clean towel.
  • In a large bowl, whisk the eggs with about 1 cup of Greek yogurt or milk. Mix in 2 to 3 cups of chopped ham and 2 to 3 cups of shredded cheese. Add plenty of black pepper and optional oregano if desired.

Layering

  • Lay one sheet of phyllo in the prepared pan and brush lightly with melted butter or olive oil. Repeat with another sheet, layering 8 to 10 sheets in total, allowing edges to hang over the sides.
  • Pour the ham and cheese mixture into the prepared phyllo base, spreading it evenly.
  • Finish with another 6 to 8 sheets of phyllo, brushing each lightly. Fold any overhanging phyllo over the top and brush generously to ensure it bakes golden and crisp.

Baking

  • Lightly score the top into squares with a sharp knife without cutting all the way through. Bake for 35 to 45 minutes until the top is deeply golden.
  • If it browns too quickly, cover it loosely with foil for the last 10 minutes.
  • Remove from oven and let it rest for 10 to 15 minutes before slicing and serving.

Notes

Serve with fresh and crunchy sides like cucumbers and tomatoes. Vary the recipe by trying different cheeses, adding greens, or using other meats. It can be made ahead of time and refrigerated for a day before baking.
