Ingredients

Main ingredients

  • 28 oz Frozen tater tots About 1 bag, usually 28 to 32 ounces
  • 3-4 cups Green beans Drained if canned, thawed if frozen
  • 1 can Cream of mushroom soup Or cream of chicken if preferred
  • 1 cup Sour cream or plain Greek yogurt For extra creaminess
  • 2 cups Shredded cheddar cheese
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 1 tsp Black pepper

Optional, but really good

  • 1 cup Cooked ground beef or shredded chicken If you want it more like a full meal
  • 1 cup French fried onions For extra crunch
  • 1 splash Milk If mixture feels too thick

Instructions

Preparation

  • Preheat your oven to 375 F.
  • In a big bowl, mix cream of mushroom soup, sour cream, half the cheese, seasonings, and green beans.
  • If you are adding cooked meat, stir it in now.
  • Spread that creamy green bean mixture into a greased baking dish.
  • Top with an even layer of tater tots.
  • Sprinkle the rest of the cheese over the top.
  • Bake for 35 to 45 minutes, until the tots are crispy and the edges are bubbly.

Variations

  • Add protein: Toss in leftover rotisserie chicken or cooked ground beef for a heartier meal.
  • Swap the soup: Use cream of celery for a flavorful change.
  • Make it more 'thanksgiving-ish' by adding French fried onions in the last 10 minutes.
  • Add heat with crushed red pepper or chopped pickled jalapeƱos.

Notes

To keep the casserole from getting watery, drain the green beans and keep the filling thick. You may also freeze the filling only, not the tots, for best results.
