Hawaiian Fried Rice

A quick and customizable dinner using leftover rice, ham, and veggies, flavored with pineapple and soy sauce for a sweet-savory meal.

Ingredients
  

Main Ingredients

  • 4 cups Cooked rice, chilled Cold rice fries better.
  • 1 cup Ham or Canadian bacon, diced Spam also works if preferred.
  • 1 cup Pineapple chunks, fresh or canned Drain canned pineapple well.
  • 2 large Eggs Scrambled separately in the pan.
  • 1 cup Frozen peas and carrots or mixed veggies Use any mixed veggies you have.
  • 2 tablespoons Green onions, chopped For garnish and flavor.
  • 2 cloves Garlic, minced Adds flavor to the dish.

Cooking Essentials

  • 3 tablespoons Soy sauce Adjust to taste.
  • 1 tablespoon Sesame oil Optional but recommended.
  • 2 tablespoons Neutral oil Such as avocado or vegetable oil.
  • to taste Salt and pepper For seasoning.

Cooking Process

  • Heat your pan and add a little neutral oil.
  • Add the diced ham and let it brown for a minute or two until it gets a little color.
  • Toss in the veggies and stir until heated through.
  • Push everything to one side and scramble the eggs on the empty side of the pan.
  • Add the cold rice and break it up with your spoon.
  • Add pineapple chunks and chopped green onions.
  • Pour in soy sauce and a tiny drizzle of sesame oil, then stir and fry until the rice looks evenly coated and has a few toasted spots.
  • Taste, then add salt, pepper, or a touch more soy sauce if needed.

Notes

If using canned pineapple, drain well and pat dry to avoid steaming the rice. Let rice sit in the pan to develop crispy bits. Store leftovers in a sealed container for 3-4 days.
