Ingredients
  

For the Chicken

  • 1 lb Boneless skinless chicken thighs or breasts
  • 3 tbsp Honey For sticky sweetness
  • 2 tbsp Lime juice
  • 2 cloves Garlic, minced Fresh is best, but powder is fine
  • to taste Salt and pepper
  • 1 tbsp Olive oil For cooking

For the Rice

  • 2 cups Cooked rice (white, jasmine, basmati, or brown)

For the Avocado Layer

  • 2 Ripe avocados, diced Not mushy
  • 1 tbsp Lime juice
  • to taste Salt
  • 1/4 cup Chopped cilantro (optional) For added freshness
  • 1/4 cup Diced tomatoes (optional)
  • 1/4 cup Diced red onion (optional)
  • 1 Jalapeno, chopped (optional) For heat
  • 1/2 cup Corn (optional)
  • 1/2 cup Black beans (optional)

Instructions
 

Preparation

  • Cut chicken into bite-sized pieces.
  • Heat a skillet with a little olive oil. Season the chicken with salt and pepper, then cook until browned and cooked through.
  • Pour in honey, lime juice, minced garlic, and let it bubble for a minute to coat the chicken.
  • In a bowl, gently toss diced avocados with lime juice, a pinch of salt, and any optional add-ins like cilantro, onion, or tomato.

Building the Stack

  • Place a small bowl or measurement cup on a plate.
  • Press in a layer of cooked rice.
  • Add a layer of the honey lime chicken.
  • Finish with the avocado mixture, pressing gently to hold the layers together.
  • Lift the mold slowly and drizzle any extra sauce over the top.
  • Add cilantro, extra lime, or sesame seeds if desired.

Notes

For meal prep, store rice, chicken, and avocado mixture separately to keep the avocado fresh. If desired, mix in black beans or corn into the rice layer for added nutrition and texture.
