  • 2 cups ice cream, melted slightly until pourable (any flavor) Use any creamy ice cream.
  • 1.5 cups self rising flour You can also make your own self-rising flour.

Optional Add-Ins

  • 1-2 tablespoons sprinkles, chocolate chips, or chopped nuts Mix-ins for added flavor.

Preparation

  • Heat your oven to 350°F (175°C). Grease your loaf pan well.
  • Let the ice cream sit on the counter until it is melted enough to stir easily. It should be smooth, not chunky.
  • In a bowl, mix the melted ice cream and self-rising flour. Stir just until there is no dry flour visible. Do not overmix; a few small lumps are fine.
  • Fold in any optional add-ins if you are using them.
  • Pour the batter into your greased loaf pan and smooth the top.

Baking

  • Bake for about 35 to 45 minutes. Start checking around 35 minutes. It is done when the top looks set, and a toothpick comes out mostly clean.
  • Cool in the pan for 10 minutes, then lift out and cool completely before slicing.

Notes

For a sweeter touch, add a simple sprinkle of sugar or mini chocolate chips on top. You can also drizzle with melted chocolate after cooling. If the top is browning too fast, lightly tent it with foil for the last 10 minutes. You can freeze the bread for later enjoyment.
