Ingredients
  

Turkey and seasonings
  • 1 whole turkey breast (boneless or bone-in) 2.5 to 5 pounds recommended
  • 1/4 cup olive oil For rubbing on the turkey
  • to taste salt Season to preference
  • to taste pepper Season to preference
  • 1 teaspoon garlic powder Optional for added flavor
  • 1 teaspoon smoked paprika Optional for added flavor
Vegetables for cooking
  • 1 medium onion (sliced into rings) Place at the bottom of the slow cooker
  • 2 medium carrots (sliced) Can be used instead of or in addition to onions
Cooking liquid
  • 1/4 cup chicken broth Can substitute with apple cider
Herbs
  • to taste fresh herbs (rosemary, thyme, parsley, etc.) Use any available herbs for added flavor

Method
 

Preparation
  1. Remove the turkey from the fridge about thirty minutes before cooking for even cooking.
  2. Mix the olive oil, salt, pepper, garlic powder, and smoked paprika in a bowl.
  3. Rub the mixture all over the turkey breast.
  4. Place the sliced onions and carrots at the bottom of the slow cooker.
  5. Lay the turkey breast on top, skin-side up.
  6. Pour the chicken broth or apple cider into the slow cooker.
  7. Toss additional fresh herbs on top.
Cooking
  1. Cover the slow cooker with the lid and cook on low for 5 to 6 hours or until the turkey reaches an internal temperature of 165°F.
  2. Avoid lifting the lid too often to maintain cooking temperature.
Serving
  1. Once done, transfer the turkey to a cutting board and tent with foil for about 10 minutes.
  2. Slice the turkey thickly, spooning some of the cooking juices back over the slices before serving.

Notes

For extra flavor, you can sear the turkey before slow cooking. If crisp skin is desired, broil for 2-3 minutes after cooking.
