Ingredients
  

For the crust
  • 1 cup almond flour Almond flour forms the base of the crust.
  • 3 tablespoons melted butter Unsalted or salted butter can be used.
  • 1/2 cup grated parmesan or mozzarella cheese This adds flavor and helps bind the crust.
For the filling
  • 2 medium onions, sliced Caramelized until golden brown.
  • 1 cup Gruyere cheese, shredded For the creamy texture and flavor.
  • 4 large eggs They bind the filling together.
  • 1/2 cup heavy cream Adds richness to the filling.
  • 1 teaspoon salt To enhance flavors.
  • 1/2 teaspoon black pepper For seasoning.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, melted butter, and grated cheese until a dough-like consistency forms.
  3. Press the crust mixture into a quiche pan, ensuring it goes up the sides.
  4. Pre-bake the crust for 10 minutes until slightly golden.
Caramelizing the Onions
  1. In a skillet, melt butter over medium-low heat and add sliced onions.
  2. Cook the onions slowly, stirring occasionally, until they are golden brown, about 15-20 minutes.
  3. Add a sprinkle of salt to enhance the flavor, and if the onions appear dry, add a splash of water.
Assembling and Baking
  1. In a bowl, whisk together eggs, heavy cream, salt, and black pepper until smooth.
  2. Once the crust is pre-baked, layer the caramelized onions on the crust.
  3. Pour the egg mixture over the onions and top with shredded Gruyere cheese.
  4. Bake for 25-30 minutes, or until the filling is set and the top is golden.
