Dough Ingredients

  • 1 cup Almond flour Main base for the dough.
  • 1 cup Mozzarella cheese Helps to make the dough stretchy.
  • 1 large Egg Binds the dough together.
  • 2 oz Cream cheese For the dough and frosting.
  • 1 tbsp Sweetener Monk fruit or erythritol.
  • 2 tbsp Butter Used for brushing the dough.
  • 2 tbsp Cinnamon Main flavoring ingredient.

Preparation

  • Melt the mozzarella and cream cheese together in the microwave until smooth.
  • Add almond flour, egg, and sweetener; mix until a dough forms.
  • Flatten the dough between two pieces of parchment paper.
  • Brush the flattened dough with melted butter, then sprinkle with cinnamon and additional sweetener.
  • Roll the dough into a log and slice it into 4 pieces.
  • Place the pieces in a microwave-safe mug or dish and microwave for about 1 minute.

Frosting

  • Mix cream cheese, sweetener, and a splash of cream to create a frosting.
  • Spoon the frosting over warm rolls to allow it to melt.

Notes

For perfect buns, avoid overcooking and knead the dough while it's warm. Use parchment paper for easier handling. Eat soon after making for best texture; they dry out quickly.
