Ingredients
  

Cheese and Base

  • 8 oz Cream cheese, softened This is the base that makes them creamy and rich.
  • 1 cup Shredded cheddar Sharp or extra sharp gives the best pop of flavor.
  • 1/4 cup Grated Parmesan Adds a savory punch and helps the exterior crisp up.

Filling Ingredients

  • 4 medium Fresh jalapenos, seeded and finely diced For heat and texture.
  • 1 Egg Helps bind the mixture so it does not fall apart.
  • 1/2 cup Almond flour Light structure without the carbs of breadcrumbs.
  • 1/2 cup Crumbled bacon Optional but recommended for smoky crunch.
  • 2 tbsp Green onion, chopped Simple seasoning that boosts flavor.
  • 1 tsp Garlic powder Adds additional flavor.
  • 1 tsp Salt To taste.
  • 1 tsp Pepper To taste.

Instructions
 

Prep and Mix

  • Preheat your air fryer to 375 F or your oven to 400 F and line a baking sheet with parchment.
  • Soften the cream cheese by letting it sit at room temperature or microwave it for about 10 to 12 seconds until just soft.
  • Chop the jalapenos, removing seeds for a milder bite or leaving some in for more heat.
  • In a bowl, stir together cream cheese, cheddar, Parmesan, jalapenos, egg, almond flour, bacon (if using), green onion, garlic powder, salt, and pepper until just combined.

Shape and Chill

  • Scoop the mixture into 1 to 1.5 inch balls using a small cookie scoop or spoon. Lightly oil your hands if the mixture sticks.
  • Chill for 10 to 15 minutes.

Cook to Golden Perfection

  • For the air fryer: Spray the basket lightly with avocado oil and place the bites in a single layer. Air fry at 375 F for 8 to 10 minutes, turning once.
  • For the oven: Place on the parchment lined sheet and bake at 400 F for 12 to 14 minutes, turning halfway. Optionally broil for 1 minute at the end for additional color.
  • Let them rest for 3 to 5 minutes before serving.

Notes

Keep jalapeno pieces small for better distribution and drying them helps the mixture hold together. Use a light mist of oil for better browning.
