Ingredients
  

Main Ingredients

  • 4 pieces Boneless skinless chicken breasts (or thighs) Thighs are juicier and more forgiving.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 4 cloves Garlic Fresh is best, but jarred works in a pinch.
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • ½ cup Parmesan cheese Finely grated melts easiest.
  • cup Sun dried tomatoes The ones in oil are easiest, just drain them.
  • 2 teaspoons Italian seasoning
  • 2 cups Spinach Optional, but a great addition.

Easy Swaps

  • 1 can Coconut cream Use as a dairy-free substitute.
  • 1 cup Half and half For a less strict keto version.

Instructions
 

Preparation

  • Pat the chicken dry, season both sides with salt and pepper. If the breasts are thick, slice them in half lengthwise.

Cooking

  • Heat oil in a large skillet over medium heat. Sear chicken for 4 to 6 minutes per side until golden. Remove chicken onto a plate.
  • In the same skillet, add garlic and stir for about 30 seconds. Pour in chicken broth and scrape up the browned bits.
  • Lower the heat and add heavy cream, parmesan, Italian seasoning, and sun dried tomatoes. Stir until the cheese melts and the sauce is smooth.
  • Add chicken back into the skillet, spoon sauce over the top, and simmer for 5 to 8 minutes until chicken is cooked through and sauce thickens.
  • If using spinach, toss it in at the end and let it wilt.

Notes

For a cozy meal prep, store leftovers in an airtight container for 3 to 4 days. Reheat slowly for best results. Ideal served over cauliflower mash, zucchini noodles or in low-carb wraps.
