For the mousse base

  • 8 oz Cream cheese, softened Must be softened for smooth blending
  • 1 cup Heavy whipping cream, cold Should be cold to whip effectively
  • 1/2 cup Unsweetened peanut butter Creamy is easiest, but crunchy can be fun
  • 1/4 cup Powdered keto sweetener Powdered blends better than granulated
  • 1 tsp Vanilla extract Adds great flavor
  • 1 pinch Salt Especially if your peanut butter is unsalted

Preparation

  • In a bowl, mix softened cream cheese, peanut butter, sweetener, vanilla, and salt until smooth and glossy.
  • In a separate bowl, whip the cold heavy cream until soft peaks form.
  • Fold the whipped cream into the peanut butter mixture in a few additions, being gentle to retain air.
  • Spoon the mousse into small cups and chill for at least 30 minutes, or serve immediately if desired.

Notes

Chilling the mousse enhances the texture and flavor. It can last 3 to 4 days in the fridge, though the texture may change over time. Optional toppings include keto-friendly chocolate, nuts, or berries.
