Main ingredients
  • 1 pound shrimp, peeled and cleaned Frozen shrimp works well too.
  • 2 medium zucchini Spiralized or sliced into thin strips.
  • 4 cloves garlic Can adjust according to taste.
  • 2 tablespoons butter For sautéing.
  • 1 tablespoon olive oil
  • 1 medium lemon Juice it fresh.
  • to taste salt
  • to taste pepper
  • to taste crushed red pepper flakes Optional, for spice.
  • 1/4 cup fresh herbs (parsley or basil) For garnish.

Method
 

Preparation and Cooking
  1. Toss shrimp with salt and pepper.
  2. Heat butter and olive oil in a skillet over medium heat.
  3. Add garlic and sauté until fragrant.
  4. Add shrimp to the skillet and cook for about 2 minutes on each side, until pink.
  5. Squeeze fresh lemon juice over the shrimp.
  6. Remove shrimp from the skillet temporarily.
  7. Add zoodles to the same pan and cook just until they start to soften.
  8. Return shrimp to the pan, combine, and toss everything together.
  9. Garnish with fresh herbs and adjust seasoning as needed.

Notes

To prevent zoodles from becoming soggy, do not overcook them. Pat shrimp dry before cooking for better searing. Leftover zoodles can be used in a salad.
