Ingredients
  

Main Ingredients

  • 2-3 pounds Chicken drumsticks, skin on
  • 2 tablespoons Olive oil or avocado oil

Seasonings

  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika (sweet or smoked)
  • 1-1.5 teaspoons Kosher salt
  • 0.5 teaspoon Black pepper
  • optional Dried thyme, dried oregano, a pinch of cayenne, lemon zest Optional extras for flavor

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C). Line a sheet pan with foil.
  • If using, place a wire rack on top of the foil.
  • In a large bowl, toss the drumsticks with olive oil.
  • Add all the seasonings and rub them into the chicken thoroughly.

Baking

  • Arrange the drumsticks on the wire rack or directly on the foil.
  • Bake for 35 to 45 minutes, turning once at 25 minutes, until the internal temperature reaches 175°F to 185°F.
  • If desired, broil for 2 to 3 minutes at the end for extra color.

Serving

  • Remove the pan from the oven and let the chicken rest for 5 minutes before serving.

Notes

Pat the drumsticks dry before seasoning for better browning. Use space between drumsticks while baking to ensure crisp skin. Leftovers can be reheated at 375°F for about 10 minutes.
