Preparation
- Crush the pork rinds into a fine powder using a food processor.
- In a mixing bowl, combine crushed pork rinds, eggs, and cheese if using. Mix well until a dough forms.
Cooking
- Heat olive oil in a skillet over medium heat.
- Scoop out about 1/4 cup of the mixture and flatten it in the skillet to form a wrap.
- Cook for 2-3 minutes on each side, until golden brown.
- Repeat with remaining mixture.
Notes
Store extras in the fridge for a few days or freeze with parchment paper between layers. Perfect for meal prepping and quick meals.
