  • 2 cups pork rinds, crushed Ensure they are plain and not seasoned.
  • 2 large eggs Acts as a binder for the wraps.
  • 1/2 cup grated cheese Optional for added flavor; can be left out for dairy-free.
  • 1 tablespoon olive oil For frying the wraps.
Optional Seasonings
  • 1 teaspoon taco spice For added flavor.
  • 1 teaspoon garlic powder For enhanced taste.
  • 1/4 cup grated Parmesan Optional, for a cheesy flavor.

Method
 

Preparation
  1. Crush the pork rinds into a fine powder using a food processor.
  2. In a mixing bowl, combine crushed pork rinds, eggs, and cheese if using. Mix well until a dough forms.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Scoop out about 1/4 cup of the mixture and flatten it in the skillet to form a wrap.
  3. Cook for 2-3 minutes on each side, until golden brown.
  4. Repeat with remaining mixture.

Notes

Store extras in the fridge for a few days or freeze with parchment paper between layers. Perfect for meal prepping and quick meals.
