Ingredients
  

Main Ingredients
  • 1/2 cup crushed tomatoes (canned or fresh)
  • 1/2 cup cooked chickpeas or white beans Substitutes for traditional eggs.
  • 1/4 cup chopped bell pepper (any color)
  • 1 small clove garlic, minced (or a shake of garlic powder)
  • 1/4 tsp cumin Essential spice.
  • 1/4 tsp smoked paprika Essential spice.
  • 1 pinch cayenne (optional, to taste)
  • 1 tbsp olive oil
  • Optional: baby spinach, hot sauce, non-dairy feta Feel free to customize.

Method
 

Preparation
  1. Toss all ingredients into a deep microwave mug. Stir pretty well to blend the spices.
  2. Microwave for 90 seconds. Give it a stir. If it’s bubbling, you’re close. If not, nuke for 30 more seconds.
  3. Once it’s steamy and aromatic, check seasoning and adjust salt if necessary.
  4. Garnish with any toppings you love such as feta, parsley, or serve with pita.

Notes

Shakshuka is forgiving; use leftover roasted veggies or swap in kidney beans. For spiciness, double the cayenne or add hot sauce. A larger mug or bowl is preferred to avoid spills. Pre-mix spices for quicker preparation and toast your bread beforehand for best results.
