Main Ingredients

  • 4 cups Cooked chicken, shredded or chopped (rotisserie chicken is perfect) Using rotisserie chicken saves time and effort.
  • 8 oz Cream cheese, softened Soften before mixing; microwave in short intervals if needed.
  • 1 cup Sour cream
  • 1 cup Cottage cheese or ricotta Either can work, choose according to preference.
  • 2 cups Shredded cheddar cheese Reserve a bit for topping.
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • to taste Salt and pepper

Topping

  • 1 cup Crushed buttery crackers or panko Panko works well for a gluten-free option.
  • 4 tbsp Melted butter

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
  • In a large bowl, mix softened cream cheese, sour cream, and cottage cheese until mostly smooth.
  • Stir in garlic powder, onion powder, salt, pepper, then fold in shredded chicken and most of the cheddar cheese. Save some cheddar for topping.
  • Spread the chicken mixture into the greased baking dish.
  • Sprinkle the reserved cheddar cheese over the top.

Topping and Baking

  • In a small bowl, mix crushed crackers with melted butter and scatter evenly over the casserole.
  • Bake for 25-35 minutes, until edges are bubbly and top is crisp and lightly browned.
  • Let it sit for 5-10 minutes before serving to allow it to set.

Notes

Make it ahead by assembling the dish and refrigerating for up to 24 hours. Add topping right before baking to keep it crisp.
